There are 2 ways to order in bulk -- Variety Packages and Selected Cuts Packages (a description of each is shown below).  The main difference between the two is that the Variety Packages are representative samples of all cuts of meat from a calf, pig, lamb, or goat.  The variety packages save you about $.40/lb (even more when purchasing a half or whole beef) when compared to buying Selected Cuts in the same combination, but there is some variance in the contents of them.  So if you are particular about the cuts you want included, you're probably better off ordering the Selected Cuts Package.  By the way, check out the "Cooking Tips" for ways to prepare each cut.

Each shipping cooler holds 50-60 lbs, and we fill them as full as possible in order to eliminate the dead air spaces that cause thawing.  This may sound like lots of meat, but it fits in a fairly small area (24"x12"x12" or 2 cubic feet), and it's less expensive than purchasing in small lots.  If you are ordering on a delivery route, we allow half-orders (i.e., 25-30 lbs.), even smaller if necessary.  Below are descriptions of the two types of bulk packages -- Variety & Selected Cuts.

 

Variety Packages

Choose the variety package that you would like to order by clicking the appropriate box.  You can also combine the different meats (beef, lamb, chicken, organs, and/or bones) into one order by using the text box below.  The total weight needs to be 50-60 lbs in order to fill the cooler.


        15# of steaks (approx 3-4 rib-eyes, 3-4 T-bones, 2 sirloins, 2 round, 2 cubed)
        15# of roasts (approx 1 rump or eye of round, 1 arm, 1 chuck, 2 stew meat)
        20# of ground beef (1-lb packs, choose 80% or 90% lean or combination)
        Price includes cutting and wrapping, and you save about $0.40/lb.

        8 beef rib-eye steaks (approx 8 lbs)
        4 beef NY strip steaks (approx 5 lbs)
        6 beef T-bone steaks (approx 7 lbs)
        6 lbs ground beef patties (deduct $4 to sub in bulk ground beef chubs)
        3 pkgs of beef kebabs (approx 3 lbs)
        4 each of lamb t-bone chops and lamb sirloin chops (8 chops total; approx 5 lbs)
        2 pkgs of pork baby back ribs (approx 7 lbs)
        6 each of boneless, bone-in, & sirloin pork chops (18 chops total; approx 9 lbs)
        This is a SAVINGS of about $0.40/lb over purchasing these items separately.

 

Side of Beef Pkg ($2.99/lb hanging weight; take home meat is about 200 lbs at roughly $4.70/lb, depending on your cutting order)
        This package is basically 3.5 boxes of the Beef Variety Pkg above, along with a few beef organs and some knuckle and shank bones.  It consists of roughly 40% ground beef, 30% roasts, and 30% steaks, but you can grind any of the roasts and steaks if you want more ground beef.  Incidentally, the hanging weight is the weight before the carcass is cut up, and the take-home weight is roughly 63% of the hanging weight.  Prices include cutting and wrapping.

        If you order by the side or whole, we cut the meat when you order, allowing you to customize the portions by specifying (1) how lean you want the ground beef, (2) how large you want the roasts, and (3) how thick you want the steaks.  Of course, you can grind any cut into more ground beef, and steaks can be left as roasts if you don't like to grill.  This package will require about 7 cubic feet of freezer space.  A whole beef would be roughly twice this size.

 


        This side of pork can include all the goodies below, like sausage, chops, and ham, along with a few organs and bones.  You can customize the cuts to your specs, or we'll use our judgment in getting you a good variety so that you can decide which cuts you like best.  Price includes cutting and wrapping, but there is an extra processing charge on linked sausages and cured items like ham and bacon.

 


        Just like the side of pork above, but twice the goodies, along with a little more price savings.  Price includes cutting and wrapping, but there is an extra processing charge on linked sausages and cured items like ham and bacon.

 


        Entire lamb, including roughly 4-6# racks, 8-10# chops, 12-15# legs, 2-3# shanks, 6-8# shoulders, 1-2# stew, 8-10# ground, 1 liver, 1 kidney, 1 heart, and a few neck bones.  Additional cuts can be ground if desired.  Price includes cutting and wrapping, and there is an extra processing charge if you want any lamb sausages.

 


        Half goat, quartered (1 front, 1 hind, 1 rib racks), vacuum-packed.  Price includes cutting and wrapping.

Selected Cuts Packages

Below is a description of each cut of beef, organs, pork, lamb, goat, chicken, and eggs, along with their prices per lb and approximate weight per package.  At the end of this section, there is a text box where you can specify which cuts you want in your order.

Griller's Delight ($8.90/lb) --  For those who love to grill, see the description of cuts above (it's the 2nd item under "Variety Packages" above.

Ground goat ($11.40/lb) --  If you've looking for a change from ground beef, pork, or lamb, this may be right down your palate's alley (1 lb)

Goat kebabs ($12.90/lb) --  Another version of a beef and lamb favorite (1 lb)

Beef kebabs ($7.80/lb)-- Lamb isn't the only meat for skewers, so we started making a beef version.  These boneless bits go great with some fruits and veggies; you'll be the talk of the party (1 lb).

Osso Bucco ($4.50/lb) -- Cross-cut beef shank steaks with the marrow bone in the center, 1.5" (1-lb, 2 steaks per pkg)

Pet sticks ($2.50/lb) -- A mix of beef heart, kidney, and liver that is ground and packaged in a tube similar in size to 2 of the ground beef packages placed end to end.  For those who don't want to mess with cutting or grinding the whole organs, your pets will love this (2-lb chub).

Hard-red wheat berries -- Certified Organic by TX Dept of Ag, these whole berries are perfect for grinding your own flour.  The 60-lb bag is $48 and the 30-lb bag is $27.  25% OFF SALE (NOW $36/BAG, OR $21 FOR HALF BAG).

Hard-white wheat berries -- OUT OF STOCK UNTIL 2012 DUE TO POOR 2011 HARVEST.  These whole berries are similar to the hard-red ones, but they will have a lower tannin content, making the flour taste a little sweeter; also certified Organic by TX Dept of Ag.  Only comes in a 60-lb bag at $54/bag.

HAMBURGER

Ground ($4.80/lb)

90% lean -- Our most popular item, perfect for any recipe (1 lb)

80% lean -- Many of the good nutrients in pasture-raised meats are found in the fat, so this version has a little more fat (doesn't work if you brown the meat and pour off the liquid, so only use for stews, broths, chili, soups, etc.).  Since it takes about 3 more months to get that extra fat on the calf, the price is still the same as 90% lean (1 lb).

Patties ($5.50/lb) -- 90% lean, 1/4-lb or 1/3-lb, no shrinkage here (1 lb)

Chili meat ($4.80/lb) -- Although we personally prefer our 80% ground beef for chili, others like this coarser grind with more gristle; either is perfect when settling in for a nippy weekend (2 lbs)

Beef sausages -- The same as our traditional pork products, but made with our quality ground beef; just right for those who love sausages but prefer not to eat pork

Beef breakfast sausage ($4.90/lb) -- Both HOT and MILD versions; great in the skillet or oven; free of nitrites and MSG.  Spices include salt, red & black pepper, sage, and brown sugar (1 lb)

Beef fresh German sausage ($5.70/lb) -- Throw a few links on the grill and make everyone happy; since these links are not smoked, they require a bit more time to grill, but they are free of nitrites and MSG.  Spices include salt, black pepper, and garlic (1.3 lbs)

Beef bratwurst ($5.70/lb) -- Similar to German, but replaces garlic with subtle caraway, nutmeg, & marjoram; no nitrites or MSG.  Spices include salt, pepper, caraway seed, nutmeg, and marjoram (1.3 lbs)

 

ROASTS

Brisket ($4.80/lb) -- Whole brisket, light trim; ready for the smoker, roaster, or oven (4-10 lbs)

Beef bacon ($8.80/lb) -- If you want bacon but can't eat pork, you'll love our beef bacon.  It's made just like the pork bacon, but using the beef brisket instead, and it has no nitrites or MSG (1 lb)

Pot roasts ($4.60/lb) -- Arm, chuck, & cross-rib roasts; bone-in, traditional pot roasts; very easy to prepare (3-4 lbs)

Boneless pot roast ($4.80/lb) -- Exactly the same as the bone-in version, but the bone is trimmed out of these roasts (3 lbs)

Rump roast ($4.80/lb) -- Lean, boneless, one of the best roasts, but a little less room for cooking error than with the pot roasts (3-4 lbs)

Eye of round roast ($4.80/lb) -- Very lean, boneless, great for kabobs when cooked rare; easy to overcook since it's very lean, so watch it closely (3 lbs)

Stew meat ($4.80/lb) -- Bite-size chunks of meat, ready for that pot of stew or soup (1-lb pkgs)

Short ribs ($3.90/lb) -- Bone-in with rib meat attached, they're best prepared in a crock pot (2 lbs)

Flanken ribs ($3.90/lb) --  Cut from the best part of the calf rib, making a 1-1.5" strip of riblets that sizzle on the grill (2 lbs).

Back ribs ($2.70/lb) -- Rib bones cut from the rib-eye with some meat between the bones (3 lbs)

 

STEAKS

Round steak ($4.80/lb) -- Leanest of the steaks, tenderized (mechanically, not with spices), great for chop steak, stir-fry, Swiss steak, or use it to make your own jerky (1 lb)

Cubed steak ($4.80/lb) -- Sometimes called a minute steak, it's lean, tenderized (mechanically, not with spices), and has 4 cutlets per pack, so reward yourself with a chicken-fried steak like you've never tasted (1.5 lbs)

Hanger steak ($6.90/lb) --  If you've tried this tender cut at a restaurant, you'll know that it's a value-priced steak (1 lb).

Flat-iron steak ($6.90/lb) -- The steak that many of you have been asking about; tasty but less expensive.

Sirloin steak ($7.80/lb) -- A well-balanced combination of leanness and flavorful marbling, 1" (1-2 lbs)

Top sirloin roast ($7.50/lb) -- Instead of cutting this part of the loin into sirloin steaks, some are left as a nice roast, much like rib-eye steaks left together as a prime rib ( 4 lbs).

Beef kebabs ($7.80/lb)-- Lamb isn't the only meat for skewers, so we started making a beef version.  These boneless bits go great with some fruits and veggies; you'll be the talk of the party (1 lb).

T-bone steak ($11.10/lb) -- This bone-in steak combines two of the steaks below, including a small, juicy tenderloin filet with a large, beefy strip-loin, 1.25" (14-18 oz)

Porterhouse steak ($11.10/lb) -- Technically, the tenderloin filet portion of this steak has to be a certain size to be called a porterhouse, but simply put, the porterhouse is a larger version of the T-bone steak, 1.25" (20-24 oz)

Strip-loin steak ($11.40/lb) -- Whether you call it a NY or KC strip, this is the steak you're craving; it's the larger, leaner side of the T-bone, 1.25" (12-20 oz)

Strip-loin roast ($11.10/lb) -- The same principle as the prime rib and top sirloin roast; this part of the loin can be left as a roast instead of cutting it into strip steaks ( 4 lbs).

Rib-eye steak, boneless ($11.90/lb) -- Boneless, tender, mouth-watering, well-marbled but not fatty... what else can we say, 1.25" (12-20 oz)

Rib-eye steak, bone-in ($11.50/lb) --  If you follow the adage, "the closer the bone, the sweeter the taste," then this is the rib-eye you're after; often called a club steak (14-16 oz)

Prime rib -- Basically a roast that's chock-full of rib-eye steaks; cook it like a roast, but enjoy it like a steak; you can get it boneless ($11.60/lb) or bone-in ($11.00/lb), otherwise known as a standing rib roast, and it can be halved (9-11 lbs whole, 5 lbs half; a little heavier if bone-in)

Tenderloin ($18.90/lb) -- Cut your own steak from this fabulous portion of beef, or grill it whole and slice it like a prime rib; minimal trimming may be necessary (4-5 lbs)

Tenderloin filet ($19.50/lb) -- The tenderloin cut into individual steaks, this is the crème de la crème; perfect for that filet mignon, 1.5" (7-9 oz)

 

-------------------------------- PORK --------------------------------

Unfortunately, we haven't found a way to effectively pasture pigs in this area.  But rather than raising them in pens with concrete floors, our pigs are grow up outdoors on the land.  However, we don't have adequate wooded areas to provide tree roots, nuts, etc.  Since pigs are not ruminants, they are supplemented with some grain.  That being said, we think this "transitional" pork is a big step ahead of the conventionally-grown pigs, and we think you'll agree once you try this clean pork.

 

Ground pork ($4.10/lb) -- If you'd rather make your own sausage, here's the foundation; it's great for stuffed bell peppers and other places where you want a change from ground beef (1 lb)

Pork sausages -- Can't beat them in the morning or evening (see Beef Sausages above if you don't want pork)

Pork breakfast sausage ($4.20/lb) -- Available in both MILD and HOT forms, it's great in the skillet or oven; free of nitrites and MSG spices.  Spices include salt, red & black pepper, sage, and brown sugar (1 lb)

Pork fresh German sausage ($4.90/lb) -- Throw a link on the grill and make everyone happy; since these links are not smoked, they require a bit more time to grill, but they are free of nitrites and MSG.  Spices include salt, black pepper, and garlic (1.3 lbs)

Pork smoked German sausage ($4.90/lb) -- Same ingredients as the fresh version, but they're already smoked/cooked; they have nitrites, however, but no MSG.  Spices include salt, black pepper, garlic, and sodium nitrite (1.3 lbs)

Pork bratwurst ($4.90/lb) -- Similar to German, but replaces garlic with subtle caraway, nutmeg, & marjoram; no nitrites or MSG.  Spices include salt, pepper, caraway seed, nutmeg, and marjoram (1.3 lbs)

Shoulder roast ($4.00/lb) -- Also called a Boston Butt, this is a very balanced roast, much like a beef pot roast (3-4 lbs)

Shoulder steak ($4.20/lb) -- Cut from the best part of the shoulder, these steaks are considered the economy (budget) pork chop (2 steaks per pkg, 1.25 lbs)

Spare ribs ($3.90/lb) -- A bigger slab than the baby backs (3 lbs)

Country-style ribs ($4.50/lb) -- These are the common grilling ribs and more economical than baby backs (2-3 lbs)

Baby back ribs ($8.70/lb) -- Nothing like a slab of these babies slathered with a rub or some thick BBQ sauce (3-4 lbs)

Ham -- Bone-in ($4.90), cured, & smoked; just heat a few hours and enjoy (8-12 lbs)

Ham steaks ($5.00/lb) --  If you like the smoked flavor but want something smaller than a ham, here's your answer; these steaks are similar to pork chops, but they're smoked and ready to eat (12-20 oz)

Pork cutlet ($4.20/lb) -- Cut from the center of the ham, these are similar to beef cutlets and perfect for schnitzel (1.5 lbs, 4 cutlets per pkg)

Pork loin roast ($5.00/lb) -- Roast that is similar to a beef prime rib if you left the rib bone in, but it's chock full of pork chops instead (2-3 lbs)

Prime pork ($6.00/lb) -- Boneless pork loin that would normally be cut into chop; stacked together in a group of 3, it's like a pork version of beef prime rib (3 lbs)

Pork chops (3/4", 2 chops per pkg, 1 lb)

Sirloin chops ($5.70/lb) -- This bone-in chop is the pork loin roast cut into chops

Bone-in ($6.00) & boneless chops ($6.30/lb) -- We save only the best for your grill.  The bone-in chop includes tenderloin along with the bone, while the boneless chop is a butterflied center cut

Bacon, seasoned/raw ($6.90/$5.20 per lb) -- Right from the belly; it's relatively lean and nitrite-free as well; you can get it seasoned (a few spices) or raw (also known as side pork); try our beef bacon if you can't eat pork but still love bacon (1 lb)

Bacon ends ($6.90/lb) -- Nitrite-free just like our bacon, hunk it into green beans, kraut, etc.  This is the last part of the belly where it gets too small to send through the slicer, but it's still the same quality (1 lb)

Pork tenderloin ($8.00/lb) -- The whole loin, similar to the beef tenderloin (1 lb)

Neck bones ($1.50/lb), ham hocks ($3.30/lb) -- Maybe you remember these from your childhood; often used in soups, stews, or a pot of beans (1-2 lbs)

 

-------------------------------- LAMB --------------------------------

Ground lamb ($6.00/lb) -- 85-90% lean, a subtle change from ground beef (1 lb)

Lamburger patties ($6.70/lb) -- Our ground lamb formed into patties; a smash hit for those who like ground lamb or want to get out of the beef burger rut (1-lb).

Leg steaks ($8.90/lb) -- For those who prefer steak instead of roast, these bone-in steaks are cut from the center of the leg; they're perfect on the grill and not nearly so big (1 lb)

Lamb kebabs ($15.90/lb)-- Few things are more tasty than skewering these boneless bits of lamb chop with some fruits and veggies; you'll be the talk of the party (1 lb)

Lamb chops -- Always a succulent favorite (4 chops per pkg)

        Sirloin chops ($10.20/lb) -- A bit larger than the t-bone, but still juicy & flavorful (2.5 lbs)

        T-bone chops ($11.40/lb) -- The delectable, traditional chop with a little more marbling (1.5 lbs)

        Rack chops ($14.20/lb) -- Similar to the T-bone, this is the lamb rack cut into chops (2.0 lbs)

Rack of lamb ($13.90/lb) -- French-style cut, full side rib rack, it's "ooh-la-la" (2-3 lbs)

Beef back ribs ($2.70/lb) -- Rib bones cut from the rib-eye with some meat between the bones (3 lbs)

Beef short ribs ($3.90/lb) -- Bone-in with rib meat attached, they're best prepared in a crock pot (2 lbs)

Calf fries/Lamb fries ($2.50/lb whole; $3.50/lb sliced) -- If you're a fan of them, you can find any better ones than these, and the lamb fries are about the same size, texture, etc. as the calf fries (1-lb).

Beef heart, kidney (both $2.00/lb), hanging tender ($7.20/lb), liver & sweetbread ($3.90/lb), oxtail, all lamb & pig organs (all $3.00/lb) -- Savory cuts that you won't find just anywhere; available from beef, lamb, pig, or goat (1-3 lbs)

Pet sticks ($2.50/lb) -- A mix of beef heart, kidney, and liver that is ground and packaged in a tube similar in size to 2 of the ground beef packages placed end to end.  For those who don't want to mess with cutting or grinding the whole organs, your pets will love this (2-lb chub).

Beef fat ($1.50/lb) -- Anyone needing tallow or suet will know what to do with this (10-lb bag)

Pork fat ($1.50/lb) -- Perfect for those who want to render their own lard (10-lb bag)

 

------------------------------ CHICKEN ------------------------------

Pastured chicken ($3.50/lb) -- Since they're grown outdoors, they can only be raised during the warm season, so we may run out of them during the winter.  All of these birds are hand-butchered by E&R Chicks, a licensed facility owned and operated by a couple near Hereford.  Currently, we only have WHOLE birds, and most dress out at 3-6 lbs.  Each bird has the organs inside the body cavity.

 

-------------------------------- EGGS --------------------------------

Brown Gems ($3.50-4.00/doz) -- Yolks that are rich and dark, whites that stand tall and firm... these are simply the ultimate in eggs.

 

Use this box to specify the cuts that  you wish to order (e.g., 3# rump roast, 5# NY strips, 2# rack, 2# liver, etc.).  If being shipped, the total weight of the order must be roughly 50 lbs.

 


 

Shipping Information

 

Please provide us with your shipping information.  The address must be a physical address, not a Route or PO Box.  If you're picking up on a delivery, just put in the name of the drop site where you'll be meeting us. After you've filled in your address, BE SURE TO CHECK IT FOR ACCURACY.  If the order is to be shipped, we cannot be responsible if there is a mistake in the information you send us.

IMPORTANT  CAVEAT:  Although the couriers occasionally pay claims for damages on perishable items, they do so reluctantly.  In the past, we had a "ship at your own risk" policy wherein the customer assumed all responsibility if the order was damaged or destroyed, that is, the customer still had to pay for the order.  Effective September 1, 2009, however, each box will carry "insurance" at a cost of $10.00/box to collectively cover any damages that may result from the courier services.  Consequently, if an order is damaged, the customer only pays for the portion that arrives in good condition..
